Kube Cake (Coconut Candy)

It is a no bake snack in Ghana that is very easy to do. It’s similar to make nkati cake (Peanut brittle)

A friend asked if I could do it and I said yes even though I had never done it before.

My first attempt at it was fascinating, I used store bought coconut flakes and it turned out great but I had very little caramel so it became extremely brittle when it dried. But that was my fault, I panicked and added more coconut flakes.

Then I set out to try other recipes that required fresh matured coconut. I found a matured coconut and tried to replicate the recipe to see if I would get the same results. It just turned to coconut caramel sauce.
As it turns out, my coconut was too wet and therefore the coconut leaked into the sauce, so it couldn’t harden.
So I made a mental note to always dry fresh coconut before using.

Then I found the most amazing caramel sauce for the kube cake. It uses, sugar, water, lemon juice and butter

So I went back to the store bought coconut flakes and using the same caramel recipe, my kube cake turned out perfect.

The caramel sauce takes about 10-15 minutes, take care when handling hot caramel as it can burn and stick to your skin and surfaces.
Adding lemon juice will prevent the sugar from crystallizing.

Recipe
100g sugar
3 tbsp water
1 tsp fresh lemon juice
75g coconut flakes
1tsp salt (optional)
1 tsp butter

Make sure all your ingredients and tools are ready because making it is very time sensitive as caramel easily burns.

Directions
Line a tray with parchment paper
To make the caramel, add water, sugar and lemon juice to a sauce pan and place over medum heat.
Allow to boil for 5-10 min, swirling when necessary, do not stir as it will cause the sugar to crystallize.
Keep an eye on the caramel as it can go from brown to burnt in a second.
As soon as it turns, an almost brown colour, add in the butter and stir with a wooden spoon or silicone spatula

As soon as it turns light amber, add in the butter and when it turns medium amber, add in the coconut flakes


Keep stirring for 5 minutes, make sure it doesn’t burn
Then pour it out onto the tray and allow it cool
When its cool enough to touch, you can mold it into balls or whatever shape you want.

When it becames too hard, microwave it 30 secs at medium heat
